About the Recipe

Can be modified to fit many different preferences and protein choices.
This photo shows thick slices of tofu that has been marinated in yellow curry paste, coated in cornstarch and pan fried.
If you would like to add more color, consider adding in other vegetables.
If your clients like heat, add in some sliced fresh chili.
There are many variations to this dish, feel free to adjust as needed to suit your needs!

Ingredients

  • 2 unripe mangos, julienne

  • 2 carrots, julienne

  • 1 cup sugar snap peas, sliced thin

  • 1/4 cup sliced green onions

  • 1/4 bunch cilantro, chopped

  • chili, sliced (optional)

  • 2 Tlbs Fish sauce

  • 2 Tlbs Fresh lime juice

  • 1 small clove garlic, grated

  • 1/2 tsp fresh ginger, grated

  • 1-2 Tlbs honey (or preferred sweetener)

  • Protein Choice

  • Microgreens or pea shoots

  • Chopped peanuts

  • Lime wedges


Preparation

Step 1


Prepare protein choice.



Step 2


Combine julienne vegetables, sugar snap peas, green onions, cilantro and optional sliced chili.



Step 3


Combine fish sauce, lime juice, honey, garlic and ginger.



Step 4


Garnish with microgreens, peanuts and lime wedges, serve the sauce on the side.
