1 portion is 2 egg cups

Ingredients
9 large eggs
1/2 cup cottage cheese
1/2 cup shredded cheddar (or other cheese)
salt and pepper
Additional add-ins
Preparation
Step 1
Preheat the oven to 300F.
Step 2
Add a pan of water to the oven to create a moist environment.
Step 3
Grease a standard muffin tin well or use a silicone muffin tin.
Step 4
Prepare any additional add-ins you choose to use. Ensure they are cooked.
Step 5
Combine the eggs, cottage cheese, grated cheese and spices into a blender and blend until smooth but do not overmix.
Step 6
Pour the egg mixture into a muffin tin until it is 2/3 full. Add in your ingredients.
Step 7
Place the muffin tin into the oven for 30-32 mins until set.
Step 8
Remove from the oven all allow to cool.
Step 9
Package as needed.
